I made this for the 4th of July and it was delicious. Had to share it!
– 1/2 cup coconut oil, melted
– 2 eggs
– 1/4 tsp salt
– 1-3 Tbsp raw honey (depending on how sweet you want it)
– 3/4 cup coconut flour
Combine all wet ingredients in medium sized bowl and beat well.
Add coconut flour and mix until dough holds together
Pat the dough ball into a greased 9″ pie pan
Refrigerate for 1-3 hours
Prick dough with fork and bake at 400 degrees F for 8-10 minutes or until lightly brown. Let cool completely before adding filling.
See recipe for homemade yogurt except instead of using whole milk, use 1/2 gallon of half and half. Be sure to drain the liquid from the yogurt to thicken it for the filling.
Take 3 cups of yogurt, 1/2 cup of honey and 1 Tablespoon of vanilla extract and mix together. Add more (or less) honey to suit your taste.
Poor yogurt mixture into pie crust and top with your favorite fruit pieces.
