There is no need to add a bunch of sugar to make a delicious jam. I made this over the weekend and it was fantastic, and I didn’t even need to add honey!
2 lbs frozen or fresh Blueberries
1 cup water
2 Tbsp. lemon juice
Honey to taste (optional)
Step 1: Pour blueberries into a large pot and add water and lemon juice.
Step 2: Place pot on stove top and cook on medium heat until it boils. Reduce heat just enough to keep a boil with the lid off.
Step 3: Stir occasionally and more often as it reduces and thickens. If you like some of the berries to be broken down, use an immersion blender or masher to break them down.
Step 4: Remove from heat once the mixture is thickened and reduced by about half – to the point where you are having to stir almost constantly to keep it from sticking to the bottom (see pic below of finished product).
Step 5: Allow to cool in pan then distribute into jars or use it as a filling for pie/desserts. Refrigerate and serve once completely cool and set. Preserves will thicken as it cools.
