I made this simple but delicious dish last weekend and had to share the recipe. So yummy!
Butternut Squash and Bacon Bake
1 medium butternut squash, peeled, seeded and cubed
1 lb bacon (preferred no nitrates), cut into small pieces
1.5 cup medium cheddar cheese, grated
Salt and pepper
Step 1: In a large skillet, fry the bacon over medium heat until crisp. Remove bacon and drain most of the bacon grease.
Step 2: In remaining bacon grease, fry squash pieces on medium heat until soft (add in more grease as necessary). Add salt and pepper to taste.
Step 3: Add bacon to the squash and stir until evenly mixed.
Step 4: pour mixture into baking dish and top with grated cheese.
Step 5: Place uncovered in oven (that is preheated to 350 degrees F) for 20 minutes or until sides bubble.
