Cauliflower Crust Grilled Cheese

• 3 cup cauliflower rice
• 1 egg
• 1/2 cup shredded provolone or jack aged cheese
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1 tablespoon butter
• 1/3 cup cheddar cheese
• Filling ideas of your choice, ie. Bacon/tomato, mushroom/onion, bay shrimp
Preheat oven to 450°F. In a food processor or cheese grater, grate the cauliflower florets to equal 3 cups. Transfer cauliflower rice to a microwave-safe dish and microwave for 4 minutes.
Place the cauliflower rice in a tea towel/strainer and twist/push it to squeeze as much moisture as you can. This is very important. The cauliflower rice needs to be dry, otherwise you’ll end up with mushy dough.
Transfer the cauliflower rice to a mixing bowl, add egg, provolone/jack cheese, salt, pepper and mix well.
Spread cauliflower mixture onto the lined baking sheet and shape into 4 rectangle pieces – equivalent in size to a half piece of large bread. Place in the oven and bake for about 20 minutes until golden.
Use a frying pan or double-sided griller and heat to medium temperature. Apply butter to outside of cauliflower “bread” for grilling (or add directly to the pan). Assemble cauliflower crusts with cheddar and any other additional fillings you like. Grill for 3 minutes on each side. Enjoy!
