Jake and I have been making these nearly every week since we discovered this recipe. So, so yummy!
Cauliflower Hash Browns
1 cauliflower head
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 cup yellow onion, grated
Step 1: Grate the cauliflower on a cheese grater or a food processor.
Step 2: In a large bowl, combine all ingredients and mix well.
Step 3: Heat a skillet on medium high heat with a tablespoon of high-heat cooking oil.
Step 4: Scoop a handful of the mixture from the bowl and flatten it in your hands, then place or in the skillet. Repeat this until your skillet is full.
Step 5: Fry the patties until brown on both sides (about 7-10 mins each side).
Step 6: Remove from the skillet and enjoy!
Add a spoonful of sour cream or homemade yogurt and sprinkle with chives for an extra special treat!
