This recipe is an excellent replacement to dishes with rice:
1 head cauliflower, grated
3 Tbsp garlic and onion infused oil
1 tsp salt
Grate the cauliflower with a cheese grater or food processor.
Heat a frying pan on medium high. Add 1.5 Tbsp oil to the pan. Get it hot enough that a small piece of cauliflower will sizzle. Add all cauliflower.
Let sit for about 5 mins until edges are just turning brown. Sprinkle with 1/2 tsp salt, pour the rest of the oil across the top, then starting flipping the cauliflower section by section until raw cauliflower from the top is now on the bottom.
Let sit for another 5 mins or until the edges start to brown. Add the rest of the salt. Continue flipping in sections until as much of the cauliflower as possible has browned.
Remove from heat and serve.
Note: Sometimes you have to walk away from the stove to keep from flipping too often. If you worry about burning it, try flipping just a small section to see how brown it is.
As the oil cooks off, you will need to flip it more often.
