1 Tbsp garlic/onion infused oil
3lbs boneless chicken breast and/or thighs cut into pieces, fat removed
½ white onion chopped
2 cups mushrooms, chopped
2 cloves garlic, minced
2 tsp salt
1 tsp pepper
½ cup parmesan cheese, grated (by hand, not pre-grated)
¼ cup jack cheese, grated (by hand, not pre-grated)
½ cup homemade yogurt
Almond milk to dilute (optional)
3 Zucchini, noodled (use zucchini noodle maker or julienne)
Step 1: Twist 3 medium sized zucchini in the noodle maker or julienne them. Fry in skillet on medium-high heat for about 2 minutes. Remove from heat and set aside.
Step 2: Pour infused oil in frying pan and fry chicken pieces on medium heat. Once cooked, add onions, mushrooms, garlic, salt and pepper.
Step 3: Remove from heat and add cheese and yogurt. Stir until cheese is melted. Add almond milk to dilute (optional).
Step 4: Pour meat mixture over zucchini noodles.
