Looking for a little comfort food tonight? This is sure to do the trick!
Coconut Lime Curry Sauce
1 cup homemade coconut milk
2 tsp lime zest or 4 drops lime essential oil
1 tsp cumin
2 tsp coriander (or 1 tsp coriander and 2 Tbsp fresh cilantro)
1 ½ tsp kosher salt (adjust to your own taste buds – I go heavy on the salt)
2 Tbsp honey
2 tsp curry powder
1 medium onion
Add all ingredients in a saucepan and bring to a boil.
Step 2: Once onion is thoroughly cooked, blend it with an immersion blender or put it in a traditional blender and blend until smooth (to thicken the sauce). Add more onion for a thicker sauce.
Pour sauce over fish, chicken, tofu, cauliflower rice, or whatever you think sounds good with this sauce.
In the picture, I have poured the sauce over pan-fried fish and cauliflower rice.
