I believe even meatloaf haters will love this recipe (unless you don’t eat meat, of course). It’s moist and flavorful even without breadcrumbs and ketchup. I do provide a sauce recipe but it’s delicious without the sauce too!
Grain-free, sugar-free Meatloaf
1 lb ground turkey (lean)
2 cups raw mushrooms, chopped small
1 Tbsp garlic and onion infused cooking oil (see recipe from previous post – use search tool to find)
2 cups raw zucchini, peeled and grated
1.5 cups sharp cheddar (amount can vary depending on taste)
1 large egg
1/2 Tbsp kosher salt (I always go heavy on the salt, so adjust to your liking)
1 tsp black pepper
2 tsp oregano or 1 drop oregano oil
After chopping mushrooms, fry in skillet with garlic/onion infused oil (or add a small amount of onion and garlic to the pan) until cooked. Allow to cool for 10 mins.
In large bowl, combine all ingredients and mix well with hands
Either place mixture in meatloaf pan and bake for 45 -60 mins at 350 degrees F (until sides are bubbling), or separate into 4 patties, brown both sides in skillet and bake in baking pan for 30 mins at 350 degrees F.
2 cups pomi pureed tomatoes
½ cup honey
2 Tbsp garlic/onion infused oil
½ tsp clove powder or dip the tip of a toothpick in clove essential oil and stir oil into mixture (toss the toothpick once stirred in – do not add it to the mixture)
½ tsp table salt
Put all ingredients in medium sized saucepan
Bring to a boil and simmer for 15 minutes, stirring regularly
Poor over meatloaf slices or patties
