Here is our Italian Sausage recipe, since it’s nearly impossible to find Italian Sausage without sugar – especially sweet Italian Sausage. We love this one!
Italian Sausage (Spicy or Sweet)
1 lb ground pork, chicken, combo, or meat substitute
2.5 tsp ground fennel (I buy fennel seed and grind it in our coffee grinder)
1 tsp ground cumin
½ tsp ground mustard
¾ tsp crushed red pepper for spicy or 1 tbsp maple syrup for sweet
¾ tsp coriander
1 tbsp dried oregano or 1 drop of oregano essential oil
1 tsp salt
2 cloves garlic, finely minced
½ medium white onion, finely minced
1 large egg, beaten
Combine all ingredients in bowl except egg. Mix well, using hands if possible to assure even spread of seasonings. Add egg and combine well with mixture. Refrigerate for an hour or overnight before cooking or freezing for optimal flavor.
