This snack requires a food dehydrator. It’s one of my all time favorite homemade snacks!
Pina Colada Banana Chips
1/2 cup fresh squeezed pineapple juice
1/2 cup raw honey
5-6 bananas, solid yellow or just starting to freckle
Shredded, dried unsweetened coconut
Mix juice and honey in a medium – sized bowl and stir until honey is dissolved. Peel bananas, slice them lengthwise as well as width-wise (about 1/4 inch thick), and place them in honey and juice mixture. Let them soak for a few minutes.
Roll bananas in coconut and place on dehydrator racks. Set at fruit setting (mine is 135 degrees) and dehydrate for about 18 hours or until chewy and not super soft.
Tip: I put a cup or so of coconut in a small bowl and throw in a handful of soaked bananas, then top them with about 1/2 cup coconut and mix it all at once with your fingers. It’s faster than rolling them one at a time.
