One of my favorite ways to make butternut squash. And so easy!
SQUASH, MUSHROOM, AND ONION FRY
Step 1: Peel and cut one butternut squash into cubes.
Step 2: Slice 1-2 cups of mushrooms (amount depends on the size of the squash and how much you like mushrooms).
Step 3: Chop a large onion into small pieces.
Step 4: Heat a skillet with a few tablespoons of high-heat oil on medium high heat. Fry the squash first for about 10 mins.
Step 5: Add in the mushrooms and onions and fry until all three veggies are well cooked. (Squash should be soft all the way through.)
Step 6: Add salt and pepper to taste.
P.s. This recipe also works well with sweet potatoes and russet potatoes, but you’ll get more nutrition from the squash or sweet potatoes.
